A shortcut garlic aioli prepared with mayonnaise to save time and effort in the kitchen.

This is my lazy aioli recipe version, and you will appreciate this recipe if you don’t want to go through the steps to whip up a classic garlic aioli.

TL;DR

A classic aioli is prepared with olive oil and garlic, and the combo activates a smooth, creamy emulsion when the garlic is pounded or ground into the oil.

I think a proper aioli should be prepared in a mortar and pestle, just the way they still do it in Southern France and Catalonia in Northern Spain.

But it’s work and when we prepare a quick dinner, we just want a shortcut aioli that tastes almost the same, to serve with our fries, fried squids or fried fish sticks.

Ingredient Notes

  • Garlic — Fresh garlic is the key here!
  • Mayonnaise — Your favorite classic mayonnaise.
  • Salt & Black Pepper — Freshly milled black pepper to bring out all the wonderful flavors. I use fruity black peppercorns (e.g., Tellicherry variety). I like to use Himalayan pink salt as it adds mineral flavors.

You can use store-bought mayonnaise (I like Dutch or Japanese style mayonnaise) or you can prepare a batch of homemade classic mayonnaise (but that would beat the purpose of an instant mayonnaise-based aioli).

Instructions

  • Peel and grate the garlic super fine with a garlic/ginger grater, or take the garlic through a garlic press.

    3-4 Larger Garlic Cloves

  • Place the mayonnaise into a mixing bowl. Add the salt, ground pepper and grated garlic to the mayonnaise.

    1 Cup Mayonnaise, pinch Salt, pinch Black Pepper Ground, 3-4 Larger Garlic Cloves

  • Mix it all together so that the garlic aioli is well incorporated.

  • Use the dipping sauce straight away, or store in your fridge in a jar or airtight container.
