Do you have some leftover curry, and are you wondering what to do with it? Then, this post will give you recipe ideas to use your leftover curry and make delicious meals.
My day will only be complete with eating a curry for at least one meal. So I do have extra curry often. Though I serve it the next day with fresh rice or roti, I sometimes feel bored and want to reuse leftovers to make creative dishes.
Indian food has different types of curries, and I experiment a lot with leftover curries. Here are all my ideas for using the leftover curry, which are approved and enjoyed by my family. If you want to make a curry, browse my vast collection of vegetarian curries.

Recipe Ideas to use leftover curry
Transforming your leftover chicken curry or vegetable curry into a new dish is a great way to reduce food waste and an opportunity to enjoy a completely different meal. Here are some of my creative ways to repurpose leftover curry, each bringing a unique twist to the table.
Savory Curry Pancakes
This is my favorite way of using leftover curry. Turn your leftover curry from lunch or dinner into delicious curry pancakes and serve it for the next morning’s breakfast with some fresh green chutney.
Any curry or even curry sauce goes well for making this recipe. Mash the curry, add it to your pancake batter, and make them like you do. You can add more flour or water to adjust the thickness. And instead of cooking the pancake, I sometimes bake it for hands-free cooking.
Below is a picture of my baked pancakes where I used leftover zucchini stir fry and made gram flour pancakes.
Curry soup
Use your leftover curry from lunch and make a delicious and comforting dinner soup. Thin out the curry with some stock, coconut milk, or hot water, bring it to a simmer, and add some fresh vegetables, chickpeas, kidney beans, or noodles for a heartier meal.
Curry fried rice
This is an easy way to turn the leftover curry into a new dish. Combine the leftover curry with rice and heat it to make a quick fried rice. Stir-fried curries make this fried rice well, and gravy curries might make the rice soggy.
Below is a picture of my fried rice, where I used carrot beans curry and cooked millet to make it. I also added cooked black chickpeas to make it a filling meal. You can use leftover rice instead of millet to make this easy recipe.
Curry Quesadillas
A delightful fusion of Indian and Mexican cuisines, where the spicy curry meets the cheesy goodness of quesadillas.
Slightly mash the curry, spread it on a whole wheat flour tortilla, sprinkle grated cheese, or top it with a slice of cheese. Then cover it with another tortilla and cook on a skillet until crispy. Serve with a dollop of sour cream for a delicious snack or with a simple salad. Similarly, you can make kathi rolls or curry tacos.
Curry Pasta
Instead of tomato sauce, mix the leftover curry with cooked pasta for a quick fusion meal. The creamy texture of the curry makes an excellent sauce for pasta. Though you can use any curry to make this recipe, gravy curry goes well as it coats the pasta and flavors it very well. You can also use leftover curry sauce to make the pasta.
For the dish in the picture below, I used mushroom spinach gravy curry, mixed it with cooked macaroni pasta (cooked it as per the package instructions), and baked it for 10 minutes.
Curry Stuffed Rice Paper Rolls
This is my kid’s favorite way to eat the roll and my favorite way to serve the curry to them! To make these rolls, you can use any curry. If the curry is a bit chunkier, slightly mash it.
Dip a rice paper roll in the water for 1 or 2 minutes. Then, spread the sheet onto a plain surface. Next, add the mashed curry and wrap it up. If you need a firmer roll, repeat the process and roll it on another rice paper sheet.
I used my leftover instant pot chana masala curry in the picture below to make these wraps. I have mashed the chickpea curry a bit to make it smooth.
To make these rolls, you can also use a spring roll wrapper. In that case, we need to cook the rolls.
Curry Salad
A refreshing salad with a curry twist will be perfect for your busy days. Mix some leftover curry with fresh veggies and cooked beans for a filling and light dinner or lunch.
I mixed my ridge gourd curry and cooked black beans in the picture below to make a filling dinner.
Curry Hummus
This is my most creative way to reuse the leftover curry. You can reuse any curry to make the hummus. In the picture below, I used my black chickpea curry to make the hummus and skipped regular chickpeas in the hummus recipe. If you have only veggie curry, add it to your regular hummus ingredients and make the flavorful curry hummus.
Curry Frittata
A hearty and satisfying frittata that brings the bold flavors of curry into a beloved breakfast dish. Instead of plain frittata, you can add leftover curry to the frittata mixture and bake it.
Curry Samosa
You can make the traditional samosa, an Indian snack with leftover curry. Leftover potato curry works best, but you can use any curry.
Fill samosa wrappers with your leftover curry, seal them, and then deep-fry until golden and crispy, or bake them as I did. Serve with mint chutney or tamarind sauce. Similarly, you can make curry puffs.
Curry Pizza
An exciting fusion dish where pizza meets the intense flavors of curry. Spread leftover curry on pizza dough, top with your favorite vegetables and cheese, and bake until the crust is crispy and the cheese is bubbly.
I used broccoli curry, topped it with fresh corn, and baked the pizza. And my kids finished it off in no time! Instead of the regular pizza base, I sometimes use naan bread and make the naan pizzas.
Curry Paniyaram
A tasty South Indian snack, paniyarams are made by adding leftover curry to the batter, creating little balls of deliciousness.
Mix the leftover curry into the paniyaram batter, pour into a paniyaram pan, and cook until they are golden brown. Serve with a side of chutney. Mash the curry if it is chunky.
Curry flatbread
Instead of making regular flatbreads with plain flour, I sometimes add leftover stir-fried curry and knead the flour. And make the flatbread like you do it regularly. In the below picture, I added my leftover plantain curry to the whole wheat flour and made the flatbread.
How to store leftover curry
Refrigerated curry keeps well for about a day or two. If you want to store it longer, freezing the curry is the best option, and you can freeze it for up to 3 months.
I always keep my curry in the refrigerator in an airtight container to keep it fresh and flavorful. When you’re ready to eat, take the necessary amount of curry and reheat it gently in a saucepan.
When it comes to extending the life of your leftover curry, freezing is a fantastic option. Keep the curry in a freezer-safe container ( I always prefer stainless steel containers) and label it with the date. Store these containers in the freezer section of your refrigerator.
When you want to serve the curry:
- Thaw it overnight in the refrigerator.
- If you are out of time, keep the frozen curry at room temperature for an hour to melt it.
- Reheat the melted curry in a saucepan and enjoy it warm.
Once you reheat the refrigerated or frozen curry, finish it off immediately. Do not store the reheated curry in the refrigerator. Discard the curry if the taste, smell, and appearance change.
