  • Milk – 1 cup (8 oz) cold. We recommend a neutral or creamy milk for this – regular dairy milk, almond, or oat milk. (Strawberry and coconut might clash a bit, but you can experiment.)
  • Ice – 1 to 1½ cups.

Step 1: Prepare the Matcha

In a separate cup or bowl, add 1 tsp matcha powder and 2 oz hot (not boiling) water. Whisk until smooth​. Since this matcha will be poured over the milk, we want it fairly concentrated. Ensure there are no lumps use a bamboo whisk, regular whisk, or electric frother. You can also shake it in a jar as per our iced latte method, but since volume is small, whisking is easier.

Set aside once dissolved. It’s okay if it cools down; we actually want it to cool a bit so it doesn’t immediately melt the ice in the drink.

Step 1: Prepare the Strawberries

  • The base of the Iced strawberry matcha latte is a quick strawberry syrup/purée.
  • In a small bowl, combine your diced strawberries with the sugar or stevia or monk fruit sweetener. Mash them together for a minute, just crush until the berries release liquid and it becomes a juicy, pulpy mixture
  • Let this sit for about 5 minutes. This process (maceration) intensifies the sweetness and liquid.

Note: If you absolutely can’t get fresh/frozen strawberries, you could cheat with a store-bought strawberry crush. But fresh is best for flavor and health!

Step 3: Assemble the Layers

Now for the fun part – layering the drink:

  1. Strawberry Layer: Spoon the macerated strawberry mixture into the bottom of your tall glass. Try to include the syrupy liquid and the strawberry bits. This should fill roughly the bottom 1/4 of the glass (more or less, depending on glass size and preference).
  2. Ice and Milk Layer: Fill the glass about halfway with ice cubes (the ice will also keep layers more distinct by cushioning the pouring). Then slowly pour your cold milk over the ice, onto the strawberry layer.
    Aim to fill until the glass is about 2/3 full with milk (leaving room for the matcha layer on top). The strawberry compote might swirl a little into the milk and create a pretty pinkish gradient at the bottom that’s fine. You’ll typically have a pink bottom, white milk middle at this stage​.
  3. Matcha Layer: Make sure your matcha mixture is not piping hot (warm or room temp is ideal; if it’s still very hot, stir in an ice cube to cool it slightly). Give it a final stir (matcha can settle quickly).
  4. Now, slowly pour the matcha over the milk. For a defined layer, you can pour over an ice cube or the back of a spoon just at the surface of the milk – this diffuses the flow so it sits on top rather than plunging straight down. You’ll see the green matcha form the top layer of the drink.

Now you have a tri-layered drink: red at the bottom, white in middle, green on top. It’s very visually appealing. Serve it with a straw (a clear straw if you want to watch the colors mix as you sip!).
