Ingredient Notes

  • Passion Fruit — That can be any passion fruit variety. I used a yellow variety which is more tart because I prefer a sour salad dressing.
  • Oil — A neutral salad oil of your choice. I like sunflower oil, canola oil or other vegetable oil.
  • Salt & Black Pepper
  • Cherry or Cocktail Tomatoes — Either is fine, they can be of different colors too for aesthetics.
  • Canned Pineapple Slice — You can use a fresh one as well, but because we only need a slice, it’s more convenient to use a canned one.
  • Iceberg Lettuce — Iceberg is crunchy and fresh and that’s why I recommend it in this salad, but as an alternative, you are free to use any other lettuce variety.
  • Cilantro, to garnish (optional)

Tip: If you can get tender coconut (the transparent jelly-like fresh coconut right after picking), add it to this salad. This salad recipe was initially made with tender coconut, but it’s challenging to come by this ingredient.

Process Overview

Step 1

Prepare the quick passion fruit dressing.

Place passion fruit pulp with seeds into a mixing bowl with the oil, salt and black pepper. Whisk it all well together.

Step 2

Cut Tomatoes into two, shred iceberg lettuce, cut pineapple into chunks.

Place all into a bowl.

Step 3

Pour dressing over the salad ingredients and toss it up.

Serve up topped with fresh cilantro.

Instructions

  • Start out with the dressing. Place the pulp of a passion fruit into a mixing bowl and add to that the oil, salt and black pepper.

    1 Passion Fruit, 1 Tablespoon Oil, pinch Salt, pinch Black Pepper

  • Combine the dressing ingredients to a smooth salad dressing.

  • Prepare your fresh and clean ingredients. Cut the tomatoes into two and chop up the iceberg lettuce into bite-sized pieces.

    12 Cherry Tomatoes, ½ Iceberg Lettuce

  • Cut the pineapple slice into smaller chunks.

    1 Slice Canned Pineapple Ring

  • Place the tomato halves, iceberg lettuce and pineapple chunks into a bowl. Pour the passion fruit dressing over the salad ingredients.

  • Mix it all up and top with chopped fresh cilantro.

    1-2 Teaspoon Cilantro

Serving & Storing

Serve your salad cooled or at room temperature with the dressing and freshly chopped cilantro.

If you are taking it to work, keep the dressing and salad ingredients separate and pour the dressing during lunch break over the salad ingredients, just before you intend to eat it.

The ingredients, without the dressing tossed in, can be left for about 2-3 days in the fridge cooled. Once you mix the dressing into the salad, you are bound to consume it or else the lettuce leaves will get soggy.
