Wheat rava kesari is a healthy alternative to regular rava kesari. Since it is made using godhumai rava this is much healthier. You can even use brown sugar instead of regular sugar. If you reduce the sugar quantity you can have this as a light breakfast too.

Kesari is one of the staple recipes in many Indian households. When it comes to quick sweets, then kesari is the first thing that pops into our mind. I have shared a lot of kesari recipes in my blog like  rava kesari, milk kesari, pineapple kesari semiya kesari and aval kesari. My most favorite kesari recipe is the milk rava kesari.

Kesari is derived from ‘kesar’ which means saffron in the aromatic semolina Indian pudding. Saffron is traditionally added in the pudding for natural golden hue color. Broken wheat rava or Godhumai rava is nothing but the coarsely grounded wheat kernels. It is a great healthier alternative to the regular semolina ( rava ) kesari. It has more nutritional values like fibre, minerals and vitamins.

Simple and easy to make : As the recipe involves basic pantry ingredients like sugar, milk, ghee and nuts. All the things can be cooked and put together in less than 30 minutes. It is one of the easy recipes to satisfy your sudden sweet craving.

Why I Love this Recipe – For me, Kesari is one of the comforting desserts from my childhood. Whenever my mood is for sweet craving, then I quickly whip up kesari within 15 to 20 minutes to satisfy immediately. My amma usually loves the kesari when I serve it along with a plate of onion bajji. Growing up, I wanted to have the kesari in a healthier way. So, I just switched to broken wheat rava for its health benefits. Now I can even serve it to my kids without any guilt.

Nutritional benefits : Broken wheat rava are rich in dietary fibre, protein and iron compared to the regular rava ( semolina ). So this sweet is good for your gut and to have anytime without guilt.

Customizable : This broken rava kesari recipe is so versatile. You can try with oats, quinoa or any millet flakes for a gluten free option. For a fruity twist, try to incorporate the recipe with mango, pineapple, apple etc.

Ingredients

Wheat rava / Godhumai rava / Broken wheat ( 1⁄2 cup ): This is the main ingredient of the recipe. It will be slightly chewy in texture than the regular semolina.

Milk (1 cup ) Water ( 1 cup ) : Milk is added to give richness and creaminess to the kesari. You can also add non-dairy milk like almond milk, oat milk based on your health diet. Water helps to cook the wheat rava completely and also ensures a soft texture.

Sugar ( 3⁄4 cup ) : Sugar is added to provide the sweetness and also to balance the flavours of the kesari. If you want to make it more healthier, try with other sweeteners like dates powder, coconut sugar, jaggery powder and palm sugar.

Ghee : Ghee is added for the aroma and also to achieve the glossy texture of the kesari.

Cardamom powder (1⁄2 tsp ) : Cardamom powder provides a warm and fragrant flavour and also it will not overpower the overall taste. For rich taste, you can also add a few saffron strands as garnishing or add saffron milk.

Cashew Nuts (1 tbsp) : Cashew nuts are roasted in ghee until golden brown. It provides a nutty and crunchy texture to the kesari.

Raisins / Kishmish ( 1 tbsp ) : Raisins are roasted in ghee until they puff up. You can also add other dry fruits like almonds, pistachios, coconut pieces or even chopped dates for roasting and garnishing.

Food coloring (a pinch optional ) : It is completely optional to yellow or red food color. To give natural color to the kesari, you can use saffron or turmeric powder.

Hacks

Roasting : In a pressure cooker, add ghee, then add broken wheat rava. Roast them slowly over low-medium flame. Stir continuously until it turns nice aroma and golden brown color. Make sure not to brown it. This will hardly take 3 to 5 minutes.

Pressure cooking : After roasting the broken wheat rava, slowly add water and milk. Then cover and pressure cook it for 2 whistles in medium flame.

Adding sweetness : Wait for the pressure to release naturally. Open the cooker, mix and mash the cooked rava. Then add sugar, keep the flame in low to medium. Cook until there are no lumps and it starts to leave the sides.

Garnishing : In a small pan, add ghee, raisins and cashew nuts. Roast until golden brown. Transfer it to the wheat rava kesari. For more aromatic flavour, add saffron and cardamom powder.

Take all your ingredients
Heat 1 tsp ghee in a pressure cooker
add in wheat rava
fry for a min
add in milk
and water
cover and pressure cook
now it is done
add in sugar
keep cooking
add a touch of food colour
mix well
it will get thick and starts to leave the sides
now heat ghee
 
you should have added cashews first, since i did’nt have that on hand, i used kishmish alone

fry lightly
pour it in
add in some cardamom powder
mix well
serve warm

 

Expert Tips

  • Roasting the broken wheat rava is so crucial for flavour and texture. Roast in low flame and stir continuously. Over-roasting makes the kesari too dry.
  • Water ratio plays a key role in cooking the wheat rava. So measure and add the water accordingly.
  • You can use a whisk to mix the kesari lump free while cooking.
  • For aromatic and flavourful vibrant kesari, soak a few saffron strands in warm milk for 10 to 15 minutes. Then add the soaked saffron milk to the kesari.
  • If you want to make it more healthier, add powdered jaggery which is high in purity and free from small dirt.
  • For more rich and creamy kesari, soak some cashews in milk and grind them into paste, then add it to the rava while cooking.

STORAGE

Store the leftover kesari in an airtight container. It stays good in the refrigerator for 5 to 7 days. To reheat the kesari, you can use a microwave oven or stove top method. To achieve soft consistency while reheating, splash some milk or water over the kesari.

Serving : Broken wheat rava can be served as naivedyam or prasadam during any poojas or special occasion to the guests. Usually in the South, it is served along with mini tiffin as a dessert during breakfast. For a more visually appealing presentation, top it off with some rose petals or edible silver leaf while serving.

FAQ

1.Why does my kesari turn lumpy?

Generally lumps are formed when the water is added too quickly. To avoid lumps in the kesari, slowly stir in one hand and gradually add the water. For best results, use a whisk to mix evenly.

2.Can I make this without ghee?

You can reduce or avoid ghee in the kesari. But the ghee fat is very important to achieve the glossy smooth texture. If you are vegan, you can use coconut oil. But adding ghee gives the authentic taste and aroma.

3.Can I add fruits to the kesari?

Absolutely! You can try other fruit options like pineapple, mango, apple, strawberries. Just saute the finely chopped fruits in ghee for 2 minutes before adding to the kesari.

4.Can I make a gluten free kesari?

Definitely! Yes you can make it completely gluten free by substituting wheat rava with barnyard millet, kodo millet or any of your favorite millet.

Variations

Chocolate wheat rava kesari : It is one of the kid friendly kesari recipes. While cooking the rava, add some 2 tablespoons of cocoa powder, mix well and ensure it is lump free.

Wheat rava payasam : Wheat rava payasam is one of the traditional south Indian kheer recipes. This recipe involves cooking wheat rava and sago in a pressure cooker, followed by sugar or jaggery syrup and ghee roasted nuts. It is often served as prasadam or for any special occasion.
