Foxtail Millet Sweet Pidi Kozhukattai Recipe : I have been making Millet based kozhukattai recipes for a couple of years on festive occasions. And this Foxtail Millet Sweet Pidi Kozhukattai is one among them. I am posting a recipe in blog after few months of break. So I was pulling myself to post this recipe before this year Vinayagar Chaturthi. Also wishing you all a very Happy Ganesh Chaturthi.

Foxtail Millet Sweet Pidi Kozhukattai Recipe

Millet Sweet Pidi Kozhukattai Ingredients

Homemade/ Store Bought Foxtail Millet Flour – 1 Cup ( 1/2 Cup whole millet yields 1 Cup flour)
Chopped Cashew Nuts – 2 Tbsp
*Palm Jaggery Syrup -1 Cup
Shredded Coconut – 2-3 Tbsp
Ghee – 1 Tbsp
Cardamom Powder – 1tsp
Salt – A Pinch

*Dissolve 1/2 Cup + 2 Tbsp Palm Jaggery in 1/2 Cup + 2 Tbsp of Water & filter
For Reduced sugar version use 1/2 Cup Jaggery and 3/4 Cup water

How to make Millet Flour

  • Do soak whole grain foxtail millet in water for 2 hours minimum and 6 hours maximum(Pic 1).
  • Drain the excess water and pat dry over cloth for 20 minutes to absorb the excess water(Pic 2).
  • Change the paper towel and let it dry under shade (Pic 3).
  • Later powder millet to fine texture (Pic 4).
  • Sieve the ground millet flour (Pic 5).
  • Take the fine millet flour for this recipe (Pic 6), coarse unfiltered millet rava can be used in other recipes.
  • For the shelf life dry roast millet in low flame and store in an air tight container
Foxtail Millet Sweet Pidi Kozhukattai Recipe

Millet Sweet Pidi Kozhukattai Preparation

  • In a heavy bottom pan dry roast millet flour in low flame for few mins.
  • Keep the flour aside.
  • Break the jaggery (Pic 1 & 2) using any heavy object.
  • In the same pan dissolve palm jaggery or jaggery powder in 1/2 Cup + 2 Tbsp of Water (Pic 3).
  • Filter impurities and keep the syrup aside (Pic 4).
  • You no need to check syrup string consistency here.
  • Clean and reheat the same pan.
  • When the pan is hot add ghee and chopped cahew nuts (Pic 1).
  • Fry till golden brown and later add prepared jaggery syrup (Pic 2).
  • When the mixture comes to rolling boil add millet flour in batches (Pic 3).
  • Add pinch of salt and also add cardamom powder (PIc 4).
  • Let the moisture evaporates and the kozhukattai mixture seperates from the pan (Pic 5).
  • Let it cool before you shape, meanwhile grease the steamer plates with oil/ghee (Pic 6).

How to make Fist Shape (Pidi Kozhukattai)

  • Grease palm with ghee/oil.
  • Take a lemon size ball of prepared kozhukattai dough in your hand (Pic 1).
  • Smooth the dough and roll to slight oval shape.
  • Keep the dough in between fingers and palm (refer video tutorial)
  • Now squeeze the dough by making a fist shape ie Press the fingers tight towards palm (Pic 2).
  • Repeat pressing until you get desired impression on dough (Pic 3).
  • Repeat the above steps for the rest of the dough (Pic 3).
  • Arrange the shaped kozhukattai on a greased steamer plates.
  • Steam in idli pan for 5 minutes over the stove (Pic 4) or do check the Instant Pot method below.

How to Steam Pidi Kozhukattai In Instant Pot

  • Add water to Instant pot inner pot and set sauté mode high by closing the IP with glass lid .
  • Let the water comes to boil, once its boiling do cancel the sauté option .
  • Place the steamer stand gently in to the boiling water (Pic 5).
  • Cover it with lid by pressing the steam release button down ie steam mode or check the video tutorial.
  • Pressure cook high for 5 minutes in steam mode using manual timer (use manual timer for steam mode, refer video).
  • Once done, remove the lid, kozhukattai looks shiny as shown above & step by step Picture 6.
  • Serve piping hot tasty millet kozhukattai immediately.
