I have been eyeing on this recipe for a very long time. This is nigella’s recipe, i was looking for ricotta cheese to make this, but sadly i couldn’t get it anywhere in my place. When we visited Goa and we went to a super market there and i was very excited to see ricotta cheese there, immediately i grabbed it and was thinking to make this as well a lemon ricotta cake which i wanted to bake for a long time.

Finally yesterday I made it and it was delicious. I tweaked this recipe a little and it turned out one of the fluffiest pancake ever. I made a quick strawberry sauce to go with it.

About Ricotta Pancakes

Ricotta cheese is made with whole milk and cream. It has a creamy milky texture to it which is used to make desserts, cakes, pasta. It is widely used in and around Italy.

Some of the most popular recipe made using ricotta cheese is cakes and desserts. But I love using it in pancakes. It creates a milky yet rich tasting PANCAKES WHICH TASTE DELICIOUS.

Ricotta pancakes is also known as ricotta hot cakes. It is made with eggs, plain flour, milk, sugar, vanilla.

Ingredients

Ricotta – ricotta is a special cheese that makes this pancakes super tender, light and delicious. You can use low fat ricotta or full milk cheese. You can use homemade ricotta cheese as well.

Egg – This recipe uses eggs, egg yolk is mixed with cheese. Egg whites is whipped and folded into the batter to make it light and airy.

Plain Flour – a small amount of flour is used in the pancakes. you can use whole wheat flour instead of plain flour.

Sugar – since this pancakes is served with syrup, you can add a bit of sugar in the batter.

Milk – milk helps lighten the batter and makes it pouring consistency. Dairy free milk or nut milk can be used.

Baking powder – you need a bit of baking powder to provide the lightness to the batter.
