Basic Ingredients Used to Make Matar Puri:

Fresh Green Peas (Matar): The Star Ingredient. Green peas add natural sweetness, fiber, and vibrant color to the pooris.
They are rich in vitamins, minerals, and antioxidants, making these pooris healthier than regular ones.

Whole Wheat Flour (Atta): The base of the recipe. Provides structure and elasticity to the dough. Whole wheat is healthier than refined flour (maida) and adds a nutty flavor and fiber.You can use maida instead of wheat flour if you want to.

Semolina (Sooji): Sooji add a crispiness, helps to make the puris crispy while retaining their softness inside. It also absorbs excess moisture from the dough, preventing oily pooris.

Coriander Leaves: Add freshness & flavor. Enhances the aroma and works as a natural cooling agent for digestion.

Green Chilies: Brings a mild to medium spice level that balances the sweetness of peas. Can be adjusted as per taste.

  • 100 gm Fresh green peas
  • 1/2 cup Coriander leaves chopped
  • 2 nos Green chilli
  • 250 gm Wheat flour
  • 2 tbsp Semolina
  • 2 tbsp Oil required while mixing atta
  • Oil to deep fry
  • 1/2 tsp Carom seeds
  • Salt to taste
  • First blend the green peas, coriander leaves,green chilli together.

  • Now take a bowl add wheat flour,semolina,salt,carom seeds and little oil and mix atta properly .

  • The add the ground matar paste and give it a nice mix.

  • Now add water little by little in it and make a stiff dough so that you can roll it without flour.

  • Divide the dough in to small poori size portion.

  • While rolling put two drops of oil and roll it to get a non sticky poori.

  • Coat the dough ball with oil, and using rolling pin roll small poori and deep fry them.

  • Serve this hot with favorite curry.(It goes well with any pickle as well)
