Sheer khurma is a traditional festive treat made during Eid, Ramadan etc. Though Sheer Khurma the name indicates the presence of dates, in many house hold they make it without dates too. Seviyan Kheer and Sheer Khurma are different in taste and flavor though both are made for Ramzan or Ramadan.

About Sheer Khurma
‘Sheer Khurma’ in Persian translates to ‘Sheer’ means milk and ‘Khurma’ means dates. Sheer Khurma is made using a special variety of fine vermicelli along with milk, ghee, condensed milk, dry fruits and nuts which makes it rich and delicious. This is a famous Eid dessert which is very quick to make and tastes incredibly delicious.
Sheer Khurma is a classic Mughalai dessert made during Eid-ul-Fitr, Ramadan etc. Sheer Khurma is very popular in Pakistan, Afghanistan and Bangladesh. This rich and delicious dessert is mostly made for Ramadan in all Muslim homes in large quantities.
Mughalai dishes are usually very rich so is Sheer Khurma with the addition of milk, dry fruits and nuts. We add condensed milk for richness and to add more creaminess to the dessert. Sheer Khurma Recipe shared here is very simple and has ingredients that are easily available in your pantry.
Sheer Khurma Vermicelli
Sheer Khurma is made using a special variety of fine vermicelli. It is not the regular semiya / vermicelli we use for upma its more finer than that. Just pick up the finest vermicelli variety you can find in supermarkets.
Roasted or unroasted any variety can be used. Even if you use roasted variety roast the vermicelli for few seconds then use it.

Sheer Khurma Ingredients
- Fine Vermicelli – Using fine vermicelli is a must for Sheer Khurma to get the traditional taste however regular vermicelli variety can also be used.
- Milk – Using full fat milk gives it a more creamy and rich dessert.
- Sweetener – Condensed milk is used for sweetness and to make the dessert more rich and creamy. White granulated sugar can be replaced with condensed milk.
- Ghee – Ghee is used to fry the nuts and dry fruits, adds flavor too.
- Dry fruits, Nuts – I used a mix of nuts like cashews, almonds, pistachio, dates, raisins etc. Except for raisins chop all nuts and dates fine then ghee fry it.
- Flavoring – Rose essence, cardamom powder and saffron are used for flavoring the dessert.

How to make Sheer Khurma Step by Step
1.Heat 2 teaspoon ghee in a pan add all the nuts and dry fruits fry until golden – 1 tablespoon each of cashews, almonds, pistachios, dates and 1/2 tablespoon raisins. Remove to a plate and set aside.

2.In the same pan add 1/2 cup vermicelli and roast it.

3.Roast until golden. Do not burn be careful as the vermicelli is thin it can burn easily.

4.Set aside to cool in a plate.

5.To a pan add 2 cups full cream milk, let it boil then simmer for 5 minutes.

6.Then add fried dry fruits and nuts(reserve a tablespoon for garnish) and roasted vermicelli.

7.Mix well and cook. As its fine vermicelli gets cooked in just 2-3 minutes so keep an eye.

8.Now add 1/2 cup condensed milk. If you want to replace condensed milk with sugar then add 1/3 cup sugar.

9.Add 5 strands saffron and 1/4 teaspoon cardamom powder.

10.Add 1/4 teaspoon rose essence. Mix it well.

11.Let it simmer for few mins until slightly thick and creamy.

12.Switch off and serve!

Sheer Khurma is ready! You can serve it hot or chilled.

Expert Tips
- The kheer thickens with time so switch it off accordingly.
- Add chiroli nuts if you like.
- You can skip condensed milk and replace it with 1/3 cup sugar too.
- If it gets thick after cooling add 1/2 cup boiled hot milk to thin it while serving if needed.
- If planning to serve it chilled then switch off when it is slightly runny itself as it tends to thicken a lot when refrigerated.
- ou can add any dry fruits and nuts you like.
- Replace condensed milk with 1/3 cup sugar. Condensed milk adds more creaminess and richness to the dessert.
- If you do not have rose essence you can add rose water or kewra water too.
- I added saffron as such in hot milk itself, but you can soak in hot milk and add it too.
Serving and Storage
Serve with nuts and dry fruits garnished. Sheer Khurma can be served hot, warm or chilled as per your preference. If chilling the dessert make sure it is slightly thin as it becomes thick after cooling down.
You can store this in fridge for 2 days, while serving bring it first to room temperature then heat and serve.

Ingredients

- 1/2 cup condensed milk (replace with 1/3 cup sugar)
- 1/4 teaspoon rose essence / kewra water
- 1/4 teaspoon cardamom powder

- 1 tablespoon cashews
