A Salad Pizza has been trending in Europe and if you have visited Italy lately, you will have come across this pizza in a takeaway place.
Here is how you can create this refreshing and aesthetically pleasing pizza at home!

Salad Pizza (or Pizza Salad) is a pizza crust baked and topped with fresh ingredients just before it’s served.
The pizza is enjoyed at room temperature most of the time, and it has to be consumed soon enough because of the fresh mozzarella cheese and delicate greens.
These salad pizza slices are pretty common in Northern Italy. In fact, we filmed a pizza place serving these on our latest trip to Bergamo near Milan.
Pizza slices are frequently rectangular in Northern Italy. In reality, most people prepare rectangular pizza at home across the border in Switzerland and Austria because the pizza dough fits on a rectangular sheet.
This recipe is all vegetarian, but I’m adding some more topping ideas further below.

Ingredient Notes
- Pizza Dough — Rolled out, homemade yeast pizza dough or store bought. If you are in a hurry (but that’s not very Italian), you could make this with my instant pizza dough.
- Tomato Sauce — plain, unflavored tomato sauce/pizza sauce, or you can use crushed tomatoes too for a chunkier effect.
- Pizza Seasoning — A blend used to season pizza. If you don’t have that, substitute with oregano instead.
- Salt
- Arugula — Fresh young leaves, shred into bite-sized pieces.
- Microgreens – I like to use a mix of microgreens for freshness. That can be mustard microgreens, pea microgreens, beet microgreens or your favorite microgreens. They each taste very differently. This is optional.
- Cherry or Grape Tomatoes — Cut into two. Plain red ones or colorful orange, yellow red mix.
- Buffalo Mozzarella Ball Fresh — Sliced, or Burrata is also an option.
- Basil — Fresh leaves only.
Process Overview
Step 1
Keep all your fresh ingredients ready.
Roll out your pizza dough and top with tomato sauce. Sprinkle salt and pizza seasoning over that.
Step 2
Bake pizza.
Allow to cool after the baking process & cut into slices.
Step 3
Top the pizza with the fresh ingredients, the arugula, tomato, basil, microgreens and mozzarella cheese slices and finish with some olive oil.

Preheat your oven to 380 Fahrenheit (190 °C).

Shred your arugula into manageable bite-sized pieces and cut the tomatoes into two. Drain the mozzarella ball(s) and slice. Keep aside.
1 Cup Arugula, 1 Cup Cherry Tomatoes, 1-2 Fresh Buffalo Mozzarella

Roll out your pizza dough and top with tomato sauce.
1 Pizza Dough, 4-5 Tablespoon Tomato Sauce

Season all over with salt and pizza seasoning
1 Teaspoon Pizza Seasoning, ½ Teaspoon Salt

Bake the “naked” pizza at 380 Fahrenheit (190 °C) for 8 to 10 minutes, or until the crust is golden brown and looks baked.

Cool your pizza for 3–5 minutes before you top it with your salad ingredients. Top with arugula, microgreens, cherry tomatoes, slices of mozzarella and basil. Drizzle some olive oil over that an serve up.
